1. Put pie crust (9”) in Oven at 475 for about 10 minutes or till golden
2. 1 ½ cups sugar
1/3 cup corn starch
Mix in sauce pan
Add 1 ½ cups cold water and stir
Cook over medium heat till thick
3. Beat 3 egg yolks add some thick mixture to egg and stir then mix the eggs with the thick mixture and boil for a minute.
Add 3 Tbsp Butter, ¼ cup lemon juice, and 1 Tbsp lemon zest
4. Put in the pie crust
5. Beat 3 egg whites till foamy, add 3 tsp lemon juice, and slow add 6 Tbsp Sugar and beat till stiff.
6. Put mixture on pie filling
7. Bake at 400 for 8-10 minutes
