Coconut Cream Pie

have a 9" baked pie crust ready. You can easily make your own. Easy Pie Crust. (Bake at 450 for 12-15 minutes)

You'll need:
  • 1 cup sugar
  • 1/4 cup corn starch
  • 1/2 tsp salt
  • 3 cups cold milk
  • 4 eggs (separate the yolks and the egg whites)
  • 1 tsp vanilla
  • 4 Tsp butter
  • 1 cup flaked coconut
For the meringue you'll need:
  • 1/2 cup sugar
  • 4 egg whites
  • 1/2 tsp cream of tartar
  • 1/4 cup flaked coconut
Mix the sugar, corn starch and salt. Slowly add the 3 cups cold milk. Heat over medium heat until boiling. (You'll want to stir constantly).
In a separate bowl mix the egg yolks. Add about 1 cup of the hot milk mixture to the egg yolks and mix well. Then add the egg mixture to the milk mixture and boil for about2 minutes. Add the vanilla and the flaked coconut.

Pour filling into pie crust.

Prepare the meringue: put the egg whites (4) in a mixer and mix until foamy. Then slowly add the 1/2 tsp cream of tartar and the 1/2 cup sugar.

Spread the meringue over the pie. And sprinkle with coconut flakes.

Bake at 350 for 10-12 minutes

Let cool in fridge for at least 3 hours.
