Pop Goes the Tart

I made these and as soon as they were done everyone ate them, so I have no pictures, but I think everyone knows what a Pop tart looks like. This recipe is pretty simple and it's very delicious! You'll need:
  • 1 cup shortening
  • 1 cup sugar
  • 2 large eggs
  • 4 1/2 cups flour
  • 2 tsp Baking Powder
  • 1/2 tsp salt
  • 1/4 cup milk
  • 1/2 cup filling (Jam, preserves, fruit butter, chocolate, what ever you want)
  • 1 large egg yolk
  • 2 Tbsp milk
  • 2 Tbsp powdered sugar
Mix the shortening and sugar till fluffy. Add the two eggs. In a separate bowl mix the flour, baking powder and salt. add the dry mixture to the sugar mixture and then add the 1/4 cup milk to it. Mix until smooth.

Now take the dough and you can either put it in wax paper to do this, or just on the counter, and roll it into a 32" snake. then cut 1" pieces out of it. You should have 32 little circles, place them on a cookie sheet and let them chill for about an hour.

Take them out of the fridge (again you can put the dough in wax paper, but it does work on the counter as well) and shape each circle into an equally big rectangle (about 4x6).

Mix the egg yolk, 2 Tbsp powdered sugar, and 2 Tbsp milk.

Then take two similarly big rectangles and cover one with your filling of choice and then lay the other on on top of it. Take a fork and press the edges closed. Then brush the pop tart with the mixture and lay it on a cookie sheet (spray the cookie sheet with oil before placing anything on it). Do this will all remaining rectangles. This should give you 16 pop tarts.

Bake them at 350 for 20-25 minutes. Place on cooling rack for about 15 minutes, and then enjoy!

For frosting: mix 4 oz powdered sugar with 2 Tbsp whole milk and brush onto pop tart!
