Banana Oatmeal Cookies


·        ¾ margarine (or butter, or shortening, or oil)
·        1 cup sugar
·        1 egg
·        1 ½ cups Flour
·        1 ½ tsp baking powder
·        1 tsp salt
·        1 tsp cinnamon
·        ¼ tsp nutmeg
·        1 ¾ cups oats
·        1 cup mashed ripe banana ( 2-3 medium bananas)
Optional:
·        ½ cup raisins or nuts or chocolate chips

Mix all ingredients until combined.
Place on cookie sheet.
Bake @200C (400F) for about 12-15 minutes.


So GOOD! Enjoy!

Nutella Cookies

I LOVE NUTELLA! I grew up in France and in Germany and this is probably something that I ate every. single. day. without fail! It's delicious, if you haven't tried it, go to the store and get some, it's good on ANYTHING! Trust me!
In my house I often make peanut butter chocolate chip cookies, and my husband suggested I try making Nutella cookies, what a great idea! So I tried and they are amazing and SO easy to make!

You'll need:

1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup Nutella
1 egg
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 1/2 cups flour
1 cup chocolate chips (these are optional, and if you're like me you'll use bitter sweet!)

First cream the butter, Nutella, and sugars. Then mix in the egg. Mix the baking soda, powder, salt and flour and then add that mixture to the butter mixture. Stir in the chocolate chips! And voila! That's it!

Make 1 inch balls or scoops, what ever you like... :D

Bake at 350 for 8-10 minutes, cool for about 5 minutes on the cookie sheet and then ...

Pumpkin Chocolate Chip Cookie



This recipe has two ways of being done, first the easy way:

You'll need:
  • 1 package of spice cake mix (or carrot or yellow cake)
  • 15 oz of pumpkin puree (I use homemade, but store bought will work as well)
  • 1 1/2 cups of chocolate chips
makes about 2-3 dozen cookies

Mix and scoop on cookie sheet and sprinkle with chocolate chips and bake at 375 for 10-14 minutes. Let cool and enjoy!

OR

You'll need:
  • 1 cup (about 7.5 oz) pureed pumpkin
  • 1 cup sugar
  • 1/2 cup vegetable oil (if you love butter, you can use butter here)
  • 1 egg
  • 2 cups flour
  • 2 Tsp cinnamon
  • 2 Tsp baking powder
  • 1 Tsp baking soda
  • 1/2 Tsp salt
  • 1 Tsp milk
  • 1 Tsp vanilla
  • 2 cups chocolate chips
Beat the oil (or butter) with the sugar, vanilla and egg. add the pumpkin and all the spices and milk. Mix the flour, baking powder and soda and then add to the pumpkin mixture. Here you can either mix the chocolate chips in or sprinkle them when you put them on the cookie sheet.

Place 1" balls on the cookie sheet and bake @ 350 for 10-12 minutes.

Double Chocolate Chip Cookies


These are so delicious and to be enjoyed with a tall glass of cold milk!

You'll need:
  • 1 cup butter
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 Tbsp Vanilla
  • 2 Tbsp milk
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 cup baking cocoa
  • 1 3/4 cups flour
  • 2 cups chocolate chips
Mix the butter and sugars until creamy. Add the eggs, vanilla and milk. IN a separate bowl mix the salt, baking soda and flour. Add the wet mixture to the dry and then add the chocolate chips.

Put 1" balls on cookie sheet and bake at 350 for 8-10 minutes for chewy cookies and 10-12 minutes for non-chewy cookies. Let sit on the cookies sheet for 2 minutes and then move to cookies rack for about 5 minutes. Then store in air tight container!

Makes about 4 dozen.

snickerdoodles


This recipe is really easy, my 14 month old daughter helps me make them!

  • 1 cup butter
  • 2 cups sugar
  • 2 eggs
  • 1 Tbsp vanilla
  • 1/4 cup milk
  • 1/2 tsp cream of tartar
  • 1/2 tsp baking soda
  • 3 1/2 cups flour
  • 1 Tbsp cinnamon
  • 3 Tbsp sugar
Beat the butter, sugar, eggs and vanilla till creamy. Add milk. Mix the cream of tartar, baking soda and flour together and then slowly mix the wet mixture to the dry.

Form little 1" balls and roll them in the cinnamon-sugar mixture. Place on baking sheet.

Bake at 375 FOR 6-8 minutes. Let rest on baking sheet for about 2 minutes and then eat or store in air tight container.

Pop Goes the Tart

I made these and as soon as they were done everyone ate them, so I have no pictures, but I think everyone knows what a Pop tart looks like. This recipe is pretty simple and it's very delicious! You'll need:
  • 1 cup shortening
  • 1 cup sugar
  • 2 large eggs
  • 4 1/2 cups flour
  • 2 tsp Baking Powder
  • 1/2 tsp salt
  • 1/4 cup milk
  • 1/2 cup filling (Jam, preserves, fruit butter, chocolate, what ever you want)
  • 1 large egg yolk
  • 2 Tbsp milk
  • 2 Tbsp powdered sugar
Mix the shortening and sugar till fluffy. Add the two eggs. In a separate bowl mix the flour, baking powder and salt. add the dry mixture to the sugar mixture and then add the 1/4 cup milk to it. Mix until smooth.

Now take the dough and you can either put it in wax paper to do this, or just on the counter, and roll it into a 32" snake. then cut 1" pieces out of it. You should have 32 little circles, place them on a cookie sheet and let them chill for about an hour.

Take them out of the fridge (again you can put the dough in wax paper, but it does work on the counter as well) and shape each circle into an equally big rectangle (about 4x6).

Mix the egg yolk, 2 Tbsp powdered sugar, and 2 Tbsp milk.

Then take two similarly big rectangles and cover one with your filling of choice and then lay the other on on top of it. Take a fork and press the edges closed. Then brush the pop tart with the mixture and lay it on a cookie sheet (spray the cookie sheet with oil before placing anything on it). Do this will all remaining rectangles. This should give you 16 pop tarts.

Bake them at 350 for 20-25 minutes. Place on cooling rack for about 15 minutes, and then enjoy!

For frosting: mix 4 oz powdered sugar with 2 Tbsp whole milk and brush onto pop tart!

Chocolate Chip Oatmeal Cookies

This recipe is easy, always a hit and delicious. You will need:
  • 1 cup butter (2 sticks)
  • 1/2 cup granulated sugar
  • 1 1/4 cups brown sugar
  • 1 Tbsp Vanilla extract
  • 2 large eggs
  • 1 3/4 flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 1/2 cups oatmeal (or quick oats)
  • 2 cups chocolate chips
Mix the butter, sugars and vanilla until creamy, add eggs one at a time. In a separate bowl mix the dry ingredients and add them slowly to the wet mixture.

Preheat your oven to 350 degrees scoop about 1 Tbsp of dough on cookies sheet (you don't need to spray it with oil trust me, the 2 sticks of butter will make sure that your cookies don't stick to the cookie sheet).

Now if you like your cookies soft (like I do) bake them for 9-10 minutes. (when you take them out of the oven they will not look done, but trust me they will finish on the cookie sheet)

Then let them sit on the cookies sheet for about 2-3 minutes and then on to the cookie rack! If you like them non soft then cook them for 11-12 minutes.

Peanut Butter Chocolate Chip Cookies

I love chocolate and peanut butter, they go together great and kids love these easy to make cookies. You mix these like you do most cookies or cakes. Beat the fats until creamy and in a different bowl you mix your dry ingredients then mix them together. I know there is much debate about how to do this, dry to wet or wet to fat; both work. However, Alton Brown (one of my heroes) recommends the muffin method, that means adding the wet goods to the dry ones and just mixing until batter comes together, it doesn't have to be smooth.

Beat ½ Cup butter

½ cup peanut butter

½ cup granulated sugar

½ cup brown sugar

1 egg

Add 1¼ cups flour

½ tsp baking powder

½ tsp baking soda

¼ tsp salt

Add 1 cup chocolate chips

Mix well

Bake at 350 for 8-10 minutes
