German Chocolate Cake


So this is my husbands favorite cake ever, I have made it about a hundred times since the 2 and a half years we've been married and have come up with a great recipe that's pretty simple.

You'll need:
  • 2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 1/2 cup butter
  • 1 cup sugar
  • 1 Tbsp vanilla
  • 3 egg yolks
  • 3 egg whites
  • 3/4 cup sugar
  • 1 1/3 cups cold water
for frosting you'll need:
  • 1 egg
  • 2/3 cup evaporated milk
  • 2/3 cup sugar
  • 1/4 cup butter
  • 1 1/2 cups flaked coconut
  • optional: 1/2 cups chopped pecans
First beat the butter till smooth, then add the cup of sugar and vanilla. Then add the egg yolks one at a time.

In a blender blend the 2 cups flour, 1/2 cocoa, salt and 1 1/2 tsp baking soda.

Slowly add the flour mixture and the cold water to the butter mixture alternately.

In a clean bowl beat the egg whites till stiff peaks form, then slowly add the 3/4 cup sugar to that.

Fold the beaten egg whites into the badder.

Bake in two 9 inch pans @ 350 for about 30 minutes or until toothpick comes out clean. Let cool.

For the frosting:

Beat the egg, stir in milk, sugar, and butter. Cook over medium heat until thick and bubbly, make sure to stir constantly.

Stir in the coconut and pecans. Cool and then spread on first cake, put the second cake on top of first cake and then cover as well.

Personally I like this cake in the fridge over night and then eaten cold the next day.

Marmorkuchen


This is a German recipe, I think it's great. (A bit dry, so I use less flour than in the original recipe)

You'll need:
  • 1 cup of butter (2 sticks or 8 oz) of butter
  • 1 cup sugar
  • 1 Tbsp Vanilla
  • 5 Eggs
  • 1 3/4 cups of flour
  • 2 1/4 tsp baking powder
  • 2/3 cups milk
  • 4 Tbsp baking cocoa
  • 2 Tbsp sugar
  • 3 Tbsp Milk
cream the 1 cup butter with the 1 cup sugar and 1 Tbsp vanilla. Then add the 5 eggs one at a time. Add the flour and baking powder and 2/3 cup milk.

Put 1/2 the dough in a bread pan or in a bunt pan.

Then add the cocoa, sugar and milk to the remaining dough.

Layer this cocoa dough over the vanilla dough.

Take a fork or a knife and stab the cake so that you are pushing down the chocolate dough. DO this about every 2 inches.

Bake @ 350 for 35-45 minutes. When you test it with a tooth pick it should come out mostly clean (no all the way clean or it'll be too dry).

Let cool for about 15 minutes.

Chocolate Chip Cheesecake


For the crust you'll need:
  • 16 crushed oreos
  • 2 tbsp butter melted
  • 1 cup chocolate chips
or you can make this crust:
  • 3/4 cups of flower
  • 6 Tbsp butter
  • 3 Tbsp sugar
  • 1 egg yolk
  • 1 tsp lemon zest
  • 1 cup chocolate chips
Either crust is fine..... I like both...

In both you mix in all the ingredients except for the chocolate chips and pat the dough on the bottom of your cheesecake pan. (I use a 13" round springform pan) bake at 300 for about 10 minutes and then take out of the oven and srpinkle the chocolate chips over it.

For the filling you'll need
  • 16 oz cream cheese
  • 1/2 cup sour cream
  • 3/4 cup sugar
  • 2 large eggs
  • 1 Tbsp vanilla
  • 3/4 cup evaporated milk
Mix the cream cheese, sugar and vanilla until fluffy. Then add the sour cream and eggs. and then add the evaporated milk.

Pour over the crust and then sprinkle with another cup or cup and a half of chocolate chips and bake at 300 for 25 minutes and then cover with aluminum foil and bake for another 30 minutes.

You'll take it out of the oven and it won't look quite done, that's fine... Just set it in the fridge and let it cool for about 4-6 hours.

Strawberry Shortcake


If you're ever in a hurry and need an easy and yummy desert, this is the recipe for you!

You'll need:
  • 1/2 cup butter
  • 2 Tbsp sugar
  • 2/3 cups milk
  • 2 eggs
  • 1 Tbsp Vanilla
  • 1 Tbsp baking powder
  • dash of salt
  • 2 cups flour
  • about 6 cups sliced strawberries
  • 1/4 cup sugar
Mix the butter, sugar, milk, vanilla and eggs until creamy. Add the dry ingredients. You can either put this in a cake pan, or in a muffin tin so that you can make individual cakes. Either way you don't want the batter more than 1/2" high.

Bake at 450 for 10-15 minutes.

Let cool for about 10 minutes and then put whip cream and strawberries on top!

Chocolate Lava Cake


This is super easy and very delicious.

Cake:
  • 1 eggs
  • 1/2 cup milk
  • 4 Tbsp butter
  • 1 Tbsp vanilla
  • 1 cup flour
  • 3/4 cup sugar
  • 4 Tbsp cocoa
  • 2 tsp baking powder
  • 1/4 tsp salt
Mix the ingredients together and put the batter in either custard pots or a big muffin tin only fill half way.

mix
  • 3 Tbsp cocoa
  • 1/2 cup sugar
Sprinkle this over the batter

Warm
  • 1 cup milk
and pour over the batter and cocoa and sugar mixture. You'll want to leave about half inch on top of the pot or tin.

Heat oven to 350 and bake for 30-35 minutes.

Take them out and dump each individual cake upside down on a plate and you will have a delicious and easy made treat!

Yogurt Cake

This cake is one of my favorites, I've been making it since I've been about 6 years old. It's easy enough to have your kids help and choose some of the ingredients. You will be using a pot of yogurt, when you have emptied the pot, you will keep using that pot to measure the other ingredients.
  • 1 pot of yogurt (170 grams/ 6oz) (if you are going to use fruit then you can use flavored yogurt, otherwise I recommend vanilla yogurt)
  • 3 "pots" flour (270 grams)
  • 2 "pots" sugar (270 grams)
  • 1 "pot" milk (190 grams)
  • 1 "pot" oil (150 grams)
  • 2 eggs
  • 2 tsp baking powder
  • 1 tbsp Vanilla
OPTIONAL: 2 cups cut up fruit ( I like to use peaches, pineapple, bananas, what ever you like, it can work. once I did raspberries and so I also added a cup of chocolate chips, it's really easy to play around with this recipe. )

Mix all the ingredients and then put in a 10"- 12" pan and bake at 350 for 45- 55 minutes (until a tooth pick comes out clear) OR you can put the batter in a cup cake pan and then bake for about 20 minutes.
In this picture it's 2 cups peaches, 1 tsp almond extract and a dash of cinnamon.
